Blueberry Muffins

Course: Dessert

Ingredients

  • cups all-purpose flour
  • ¾ cup white sugar
  • ½ tsp salt
  • 2 tsp baking powder
  • cup vegetable oil
  • 1 egg
  • cup milk
  • 1 cup fresh blueberries
  • ½ cup white sugar
  • cup all-purpose flour
  • ¼ cup butter cubed
  • tsp ground cinnamon

Instructions

  • Preheat oven to 400° F (200° C). Grease muffin cups or line with muffin liners.
  • Combine 1½ cups flour, ¾ cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Crumb Topping:

  • Mix together ½ cup sugar, ⅓ cup flour, ¼ cup butter, and 1½ teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  • Bake for 20 to 25 minutes in the preheated oven, or until done

Pumpkin Apple Streusel Muffins

Servings: 18 muffins

Ingredients

  • cups All-purpose flour
  • 2 cups Sugar
  • 1 Tbsp Pumpkin pie spice
  • 1 tsp Baking soda
  • ½ tsp Salt
  • 2 Eggs lightly beaten
  • 1 can Solid pack pumpkin
  • ½ cup cooking oil
  • 2 cups Apples peeled, finely chopped
  • Streusel topping

Instructions

  • In large bowl, combine first five ingredients and set aside
  • In medium bowl, combine eggs, pumpkin, and oil
  • Add wet to dry, stir until just moistened
  • Stir in apples
  • Spoon batter into greased or paper-lined muffin cups, filling ¾ full
  • Sprinkle Streusel topping over batter
  • Bake in preheated 350° F oven for 35-40 minutes, or until toothpick comes out clean

Streusel Topping

  • In small bowl, combine 2 Tbsp all-purpose flour, ¼ cup sugar, and ½ tsp ground cinnamon
  • Cut in 4 tsp butter until mixture is crumbly
