Spicy Honey Balsamic Salmon

Ingredients
- ⅓ cup balsamic vinegar
- 4 Tbs honey
- 2 Tbs tamari/soy sauce
- 2 cloves garlic chopped
- 1 tsp dried thyme
- 1 tsp dried oregano
- chili flakes
- 4 filets 4-6 ounce salmon, cut into bite-size chunks
- 1 bunch asparagus ends trimmed
- 2 Tbs olive oil or sesame oil
- salt and black pepper
- 2 avocados diced
- 2 Tbs lemon juice
- 2 Tbs toasted nuts/seeds
- ½ cup mixed herbs chopped I use dill and basil
- ½ cup crumbled feta
Instructions
- Preheat the oven to 450° F.
- In a saucepan, combine balsamic vinegar, honey, tamari/soy sauce, garlic, thyme, oregano, and chili flakes. Set over medium heat. Bring to a boil for 3-4 minutes, until the sauce bubbles and begins to thicken. Remove from the heat.
- On a baking sheet, toss the salmon with half of the balsamic sauce and arrange in an even layer. Arrange the asparagus around the salmon, toss with 1 tablespoon of oil and season with salt and pepper.
- Bake for 10-15 minutes or until the salmon is cooked to your liking. During the last minute, switch the oven to broil and broil until lightly caramelized. Toss the salmon with the remaining balsamic sauce.
- Meanwhile, combine the avocado with 1 tablespoon of oil, lemon juice, herbs, nuts/seeds, and feta in a bowl. Season with salt.
- Spoon the asparagus and salmon over the bowls of rice. Top with lots of the avocado/feta salad mix. Enjoy!
Herb Baked Salmon
Servings: 2
Ingredients
- vegetable oil spray
- 3/4 pound salmon fillet
- 1 tablespoon Dijon mustard
- 1/4 cup parsley fresh, chopped
- 1 teaspoon oregano dried
- 1/2 teaspoon thyme dried
- 1/2 cup plain bread crumbs
- salt and pepper to taste
- 1 egg white
Instructions
- Preheat oven to 350°. Line a baking tray with foil and spray with vegetable oil spray, Wash salmon, pat dry, and spread mustard over the top. Mix parsley, oregano, thyme and bread crumbs together. Season with salt and pepper.
- Blend in egg white to bind mixture together. Spread over mustard. Bake in oven for 20 to 25 minutes, depending on thickness of fillets. Remove from oven and serve on individual plates with rice.
Orange Honey Marinated Salmon
Ingredients
- 1/3 of a cup of orange juice
- 1/3 of a cup of soy sauce
- 3 tablespoons of peanut oil
- 3 tablespoons of ketchup
- 1 tablespoon of honey
- ½ teaspoon of ground ginger
- 1 clove of garlic crushed
- 4 salmon steaks or filets
Instructions
- Mix all of the ingredients together, except the salmon.
- Place the salmon in a shallow glass dish. Pour the marinade over the salmon, cover and refrigerate for one hour.
- Drain the salmon, and reserve the marinade. Grill the salmon, uncovered, about five minutes, depending on thickness. Turn the salmon over and baste with the reserved marinade. Grill until the fish flakes when tested with a fork.
