Oven-baked Split Pea Soup

Equipment

  • 1 large cast iron pot with a tight fitting lid

Ingredients

  • 1 medium onion
  • 4-5 celery stalks
  • 3 medium carrots
  • dried thyme leaves
  • salt and pepper
  • 2 ham hocks or one meaty ham bone optional
  • 1 lb dried split peas
  • 6 cups water vegetable broth, or chicken broth

Instructions

  • Cover pot. 325° for about 2 hours.
