Cut carrots in strips and onions in wedges. Brown in vegetable oil in large frying pan, medium to high heat.
Trim pork chops. Roll in flour, then dip in mixture of beaten eggs and milk, then roll in bread crumbs.
When vegetables are done, remove from oil and set aside.
Brown chops in the same oil on med high, when browned remove from pan and put the vegetables back in.
Reduce heat to medium low, add 1-2 cups water, cover, and simmer for one hour.
