Italian Zucchini Soup

Ingredients

  • 2 Tbs olive oil
  • 3 green onions , chopped
  • 4 c zucchini , chopped
  • 1 clove garlic , minced
  • 2 tsp Salt
  • 1/8 tsp pepper
  • 4 c beef broth
  • 1 Tbs butter
  • 2 Tbs chopped parsley

Instructions

  • Cook oil, zucchini, green onions and garlic for 10 minutes.
  • Add salt, pepper and broth.
  • Continue cooking for 35 minutes.
  • Stir in parsley and butter.
  • Serve with generous amount of grated Parmesan cheese (1/4 cup per bowl).
