Ingredients

large russet potatoes
salt
freshly ground black pepper and cayenne to taste
1/4
cup
olive oil
or enough to cover bottom of baking dish
fresh oregano springs
optional

cup
chicken broth
2
teaspoons
lemon zest
juice from 1 or 2 lemons
Instructions
Roast at 400 F. for 20 minutes, flip and cook another 15 min., then flip again, and continue roasting until very tender and crusty.
