Lemon Pepper Potatoes

Ingredients

  • 4 large russet potatoes
  • salt
  • freshly ground black pepper and cayenne to taste
  • 1/4 cup olive oil or enough to cover bottom of baking dish
  • fresh oregano springs optional
  • 1 cup chicken broth
  • 2 teaspoons lemon zest
  • juice from 1 or 2 lemons

Instructions

  1. Roast at 400 F. for 20 minutes, flip and cook another 15 min., then flip again, and continue roasting until very tender and crusty.
