Zucchini Pineapple Cake

Course Dessert

Ingredients

Beat until light and fluffy

  • 1 C oil
  • 2 C sugar
  • 3 eggs
  • 2 tsp vanilla

Add:

  • 3 C flour , sifted
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 C Zucchini (2 large or 3 small)
  • 1 C crushed pineapple , drained
  • ½ C nuts
  • ½ C raisins

Instructions

  • Mix all together.
  • Fold in nuts.
  • Pour into 2 greased and floured loaf pans or 1 9x13” pan.
  • Bake 9x13 pan at 350° 30-35 minutes, the 2 loaf pans for 1 hour
