Three Potato Chowder

Course Soup

Ingredients

  • ½ cup water
  • 1 cup halved and sliced leeks , cut in half
  • ¾ cup chopped celery
  • ½ cup sliced carrots
  • 1-2 cloves garlic , minced
  • 4 cups Veg Broth
  • 1 cup EACH chopped and unpeeled purple , red, yellow potatoes
  • 1 Tbs parsley flakes
  • 1 bay leaf
  • ½ Tbs soy sauce
  • Freshly ground pepper to taste

Instructions

  • Place the water, leeks, celery, carrots and garlic in a soup pot.
  • Cook, stirring occasionally, for 5 minutes.
  • Add the broth, potatoes and seasonings.
  • Bring to a boil, reduce the heat, cover, and cook over low heat for 40 minutes.
  • Remove the Bay Leaf.
  • Serve with fresh bread.
