- vegetable oil for pan
- 1½ lbs ground sirloin
- 1 small yellow onion cut in quarters
- pickles chopped
- splash milk
- 1 large egg beaten
- 1 cup plain bread crumbs
- 2 Tbs grill seasoning e.g., McCormick Montreal Steak Seasoning
- 1 cup smokey BBQ sauce divided
- ½ cup tomato salsa
- 1 Tbs Worcestershire sauce

Preheat oven to 450° F. Brush a 12 muffin tin with vegetable oil

Put ground beef into a big bowl

Put onions into a food processor

Add the pickles to the food processor

Pulse the food processor to finely chop the onion and pickles. Add to the meat bowl

Whisk the milk into the beaten egg and add to the meat. Add bread crumbs and grill seasoning

In a small bowl, mix together the BBQ sauce, salsa and Worcestershire sauce

Pour half the sauce mix into the bowl with the meatloaf mix. Mix the meatloaf together with your hands

Use a large ice cream scoop to put the meat into the muffin tin

Top each "muffin" with a spoonful of reserved sauce. Bake about 20 minutes. Cut open a muffin to test if it's cooked through

- 1 lb ground beef leaner is better
- 1 4 oz can mushrooms reserve juice
- 1/2 cup dry bread crumbs
- 1 large egg
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 4 center cut bacon strips
- 1 tsp dried parsley
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp thyme
- 2 tbsp dry bread crumbs
- 1/2 onion finely chopped
- 1 cup mozzarella cheese
- 1 8 ounce can tomato sauce

Preheat oven to 375 degrees. Add water to mushroom juice to make 1 cup. Fry bacon until crispy, drain and crumble. Set aside.

Combine beef, 1/2 cup breadcrumbs, egg, mushroom juice, garlic powder and salt in a large bowl. Mix well. On wax paper, form meat mixture into a 8x12 inch rectangle.

Sprinkle meat with parsley, oregano, basil, thyme and 2 tablespoons of breadcrumbs. Spread bacon, onion, mushrooms and cheese evenly over meat.

Roll meat into an 8 inch wide loaf. Place meatloaf into an 8 inch glass bread pan or glass baking dish.

Bake for 60 minutes. Pour tomato sauce over meatloaf, and cook for an additional 15 minutes.

Let meatloaf sit for 5 minutes before slicing and serving.
