Kona Banana Bread

- ½ cup shortening
- ¾ cup sugar
- 2 eggs
- ¾ cup mashed ripe bananas
- 1¼ cup sifted cake flour
- 1 tsp baking soda
- ½ tsp salt
Cream shortening and sugar until light
Add eggs one at a time, beating well after each addition
Turn in bananas
Sift together flour, baking soda and salt. Add to banana mixture
Mix just until blended
Pour into greased 9x9 pan
Bake at 350° for 35--40 minutes, or 9x13 pan for 25 minutes
Cool
