Kona Banana Bread

Ingredients

  • ½ cup shortening
  • ¾ cup sugar
  • 2 eggs
  • ¾ cup mashed ripe bananas
  • cup sifted cake flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  • Cream shortening and sugar until light
  • Add eggs one at a time, beating well after each addition
  • Turn in bananas
  • Sift together flour, baking soda and salt. Add to banana mixture
  • Mix just until blended
  • Pour into greased 9x9 pan
  • Bake at 350° for 35--40 minutes, or 9x13 pan for 25 minutes
  • Cool
